Hope you all are safe and are doing good !! This quarantine has motivated many of us to become a great chef in our kitchens. Its really inspiring rather mouth watering to see many people coming up with new recipes on Instagram , Facebook and where not !
Ultimately , these posts made me crave for something spicy and delicious. And so , I decided to make one of my favourite Chicken appetizers - the "Tandoori Chicken" . Right from my childhood , Tandoori chicken has been my all time favourites. I tried and tested many recipes and finally came up with the perfect restaurant style Tandoori chicken which anyone can easily prepare at home .

Whats Is Tandoori chicken ?
Tandoori chicken is an authentic Indian cuisine originated from the Indian subcontinent and is now popular in many parts of the world. Its a famous chicken dish prepared by roasting or grilling chicken marinated in yogurt and spices in a traditional Tandoor , a cylindrical clay oven.
Tandoori masala is the main ingredient used along with other spices to make the chicken more flavoring. The masala typically include : garam masala , garlic , ginger powder , onion , cayenne pepper and sometimes other spices and additives.The specific spices vary from one region to another and are often ground together with a pestle and mortar.

Tandoori Chicken Recipe - Restaurant Style Tandoori Chicken
Prep Time : 10 minutes | Cook Time : 35 minutes | Marination : 8-10 hours | Total Time : 40 minutes
INGREDIENTS
For The First Marination -
700gm Chicken (thighs or breast)
1 tsp Salt
2 tsp Lemon Juice
2 tsp Ginger Garlic Paste
1/2 tsp turmeric powder
1 tsp Kashmiri Red Chilli Powder
For The Second Marination -
2-3 tbsp Hung Curd
1 tsp Ginger Garlic Paste
1 tsp Kashmiri Red Chilli Powder
1/2 tsp Black Pepper Powder
1/2 tsp Turmeric Powder
1/2 tsp Cumin Powder
1 tsp Garam Masala Powder
2 tbsp of Everest Tandoori Chicken Masala
1 tsp Coriander Powder
1/2 tsp Aamchur powder(optional)
Pinch of red or orange food colour
1 tsp Lemon Juice
2 tbsp Cooking oil
1-2 tbsp Kasuri Methi (dried fenugreek leaves)
To Prepare -
1 -3 tbsp cooking oil
1 tbsp butter
2-3 pieces of charcoal
To Serve or Garnishing -
1 tbsp Butter
1 tsp Chaat Masala
Onion Slices
HOW TO PREPARE TANDOORI CHICKEN
Marinade For Tandoori Chicken -
Clean, wash and make cuts on the chicken using a sharp knife. This helps the marinade to penetrate well into the chicken.
In a large bowl, mix all the ingredients of first marinade. Add chicken and mix it very well.Ensure the marinade is applied in the cuts.
Cover the bowl and leave it for 10 minutes while we prepare our second marination.
In another large bowl, add all the ingredients of second marinade till lemon juice and mix it very well.
Then, transfer the chicken into this second marinade.Mix well and ensure the marinade is applied inside all cuts.
Add oil and crushed kasuri methi and mix again. Cover the bowl with a cling film cover and refrigerate for 8-9 hours or overnight in the freezer.
Prepare Without An Oven -
Heat a pan and add 1-2 tbsp of cooking oil.Then add 1 tbsp butter.This gives a nice and juicy taste to the chicken.
Add the chicken pieces one by one.Set the flame to medium.
Brush the chicken with some oil from the pan.Cover the lid and cook for 5 - 10 mins.
Flip the chicken pieces in between so that all sides are almost cooked.You can also coat the chicken with left over marinade before flipping in to other sides.
Then remove the lid and cook for another 10-15 mins until water is dried up and chicken is soft and cooked.
Prepare With An Oven -
To prepare on an oven pre-heat the oven at 240 degrees centigrade for 15 mins.
Place a foil on an oven tray to collect the drippings.
Remove the chicken from the marinade and place it on greased wire rack.Ensure the frozen chicken has come to room temperature before cooking in an oven.
Grill for 15 mins.
Brush some oil and left over marinade on the chicken.You can use a silicone brush.
Flip the chicken pieces to the other side and coat it with some oil and marinade.
Grill for another 10 minutes until the chicken is properly cooked.You can also broil it for 5 minutes till done.
Smoke The Prepared Chicken -
For smoked chicken , burn a char coal piece and place it in a small cup(vatti).
Add a tbsp of ghee or butter to the cup.If preparing on an over keep it on the chicken tray when it starts producing smoke.Cover the whole with a large utensil.
In case of stove place the cup inside the cooking pan along with the cooked chicken.Then cover it with the lid.
Allow it to sit for good 7 - 10 mins. Meanwhile sprinkle some chaat masala on the onion slices to serve in with the chicken.
Finally , remove the lid and coat the chicken with some butter.
Serve in hot with onion slices or salad and mint green chutney.
Serve it as a starter or appetizer, or as a main course, often served with naan flatbread.
