Belated happy Onam! Hope you had a safe and joyful celebration. Really wanted to post something special for this Onam but was hooked up with too much work. But that’s okay as today I have a very special recipe for you.
Probably the last few days might have been a vegetarian platter for most of us. If you are a non-veg lover like me, then it’s obvious that you will be very much craving for it. So why not try out something fishy??
This one is my mother’s signature prawn roast recipe. My mouth just started watering the moment I talked about this dish. It’s so delicious and tastes amazing with rice and roti. You won’t need any other dish if you have prepared this special prawn recipe. And the best part is that it's a super simple go-to recipe which anyone can prepare at any time.
Masala roast dishes always have a special place in a Malayalee's heart. We use quite many different varieties of masala in pretty much every dish, and it’s the spices and curry powders that make our life eternal. This is one such flavourful dish and hence you are definitely gonna like this one.
Kerala Style Prawns Roast Masala

Prep Time: 10 minutes | Cook Time : 20 minutes | Total Time : 30 minutes
Ingredients
For Marination -
250-300gms prawns (cleaned & deveined)
1 piece ginger
6-7 garlic cloves
2 tbsp red chili powder
½ tsp turmeric powder
1 tsp pepper powder
¼ tsp dry fenugreek powder
1 tsp oil
A handful of curry leaves
Salt as per taste
For Preparation of Prawns roast -
2 tbsp of coconut oil
1 bay leaf
2-3 cloves
2 large onions finely chopped
1-2 slit green chilies
1 tomato finely chopped
½ tsp ginger garlic paste
Few curry leaves
Salt
How to prepare prawns roast
Marination of the prawns -
Take a blender and add the red chili, turmeric, pepper powder, ginger, garlic cloves, curry leaves, and some salt.
Without adding water blend the ingredients to a coarse mixture.
Now take a bowl, add the cleaned prawns, and the grounded mixture to it.
Mix all the ingredients well. Then add ¼ tsp dry fenugreek powder and salt if required.
Leave the marinated prawns for 10-15 mins.
Preparation of the Prawns roast -
Take a pan and add 2 tbsp oil. Once the oil becomes hot, add 1 bay leaf and 2-3 cloves.
Saute for 1-2 mins and then add the finely chopped onion, curry leaves, and slitted green chilies.
Again saute for 3-4 mins, add some salt and ginger garlic paste and mix well.
Keep mixing and saute the onions until they are golden brown in color.
Next, add the finely chopped tomato and mix well.
Cook it on medium flame until they are soft and mushy.
Once the oil starts separating from the sauteed mixture, add the marinated prawns to it and mix well.
Then add ¼ cup of warm water, cover the pan and cook for 5-10 mins on low flame. Stir occasionally.
Once the prawns are fully cooked, remove the lid and cook it on medium to high flame.
Saute in between until the mixture becomes dry.
Toss some curry leaves and salt if required and give a quick mix.
Close the lid and let it sit for 5 minutes before serving.
Finally, serve it warm with rice or roti.
