I am super excited about today's recipe. It’s something which even I tried out for the very first time. This dish is very popular in south Asian countries and is prepared using minced or ground meat ( mostly chicken/lamb) topped on skewers and grilled on a mangal or barbecue, or in a tandoor. It’s none other than the authentic seekh kebab.
Now today I will be sharing the chicken seekh kebab but you can follow the same procedures for lamb or beef kebabs too. Anyways, since we won’t be able to go out and have anything special, why not prepare a small treat at home itself. This recipe can be the best for a small family or friends to get together where you can set up a barbeque and prepare these tasty, juicy, and delicious kebabs and serve it with some mint chutney and salad.
That would make a great evening treat for sure. So without any further ado let's get to know the recipe.
Authentic Chicken Seekh Kebab Recipe

Prep Time : 10 minutes | Marination Time : 1-2 Hrs | Cook Time : 15 minutes | Total Time : 25 minutes
Ingredients
For Marination -
500 gm grounded boneless chicken
2 medium-size onions
2 tbsp ginger-garlic paste
½ cup coriander leaves finely chopped
10-12 green chilies finely chopped
1 tsp Kasuri Methi
½ tsp garam masala
1 tsp red chili powder
1 tbsp chaat masala
½ tsp amchur powder
½ tsp black pepper powder
1 tbsp kebab masala
1 tbsp coriander seed
1 tbsp cumin seed
Salt as per taste
For Grilling/Cooking -
Oil
Butter
2-3 Skewers
A bowl of water
How to Prepare Chicken Seekh Kebab
Preparation of the marination -
Dry roast coriander seeds and cumin seeds separately on a frying pan until it releases its aroma. Then grid / crush them separately in a mixer and keep aside.
Next roughly chop the onions and add it to a mixer. Blend it until it forms a paste.
Take a muslin cloth to squeeze out all the water from the onion paste. Make sure the paste is left completely dry after the process.
Now take the grounded chicken in a bowl and add ginger garlic paste followed by all the masala powders.
Then add grounded onion paste, chopped coriander leaves, Kasuri Methi, and green chilies to the chicken.
Mix it well using hands nicely so that all the ingredients are combined well.
Cover the bowl with a plastic wrap and leave it for 2 hrs in the fridge.
Preparation of the seekh kebabs -
Uncover the bowl having the marination. Also, take a small bowl of water to slightly wet our hands while making the kebabs.
Next, take the skewers ( wooden or metal ones ). Make sure they are thick enough to hold the kebabs.
Now wet your hands, take a small portion of the minced chicken marination and form a ball out of it.
Then take a skewer and slowly insert it to the center of the meatballs and then slowly press to shape it around the skewers.
You can again wet your hands in between and keep pressing gently from all sides until it is evenly spread and completely holds to the skewer and looks like a seekh kebab.
To get the exact shape of the seekh kebab gently create marks from top to bottom by using your thumb and index finger. This is an optional step so you can exclude it if you want.
Follow the same procedure for making the rest kebabs.
Now once all the kebabs are ready it’s time to grill them. For this, you can either use a grill pan or a charcoal barbeque grill which actually gives the best taste.
If you are using a grill pan make sure the skewers fit well in them else the cooking process can be really difficult.
With a grill pan -
Pour 2 tbsp of cooking oil and 1 tbsp butter. Let the oil heat up and the butter melt.
Then place the skewers on to the grilling pan.
Brush them with some oil.
Cook on medium flame and make sure you keep rotating the skewers until all sides are done.
Once all sides are cooked when and turn golden dark brown in color, remove from the stove and serve hot with some mint green chutney and salad.
With a charcoal barbeque grill -
Allow the charcoal to become hot.
Once they are fully hot, place the skewers on top of the grill.
Brush them with some oil or ghee to cook them well from all sides.
Cook them for 10-12 mins or until golden brown on all sides. Keep rotating the skewers until all sides are done.
That's it! Your delicious chicken kebab is ready. Serve it hot with some salad and green mint chutney.
